Effortless Dinners to Melt Away the Winter Blues

 Easy Chicken Noodles

6 skin on chicken thighs (can be frozen)

2 small cans of cream of celery soup

1 large can of cream of chicken soup

1 large can of cream of mushroom soup.

1 large bag of egg noodles


Seasonings

Onion powder

Tony’s

Garlic powder

Pepper

Green goddess (I get this from Trader Joe’s but other stores may have their own version of this seasoning)

Salt to taste

This can be made in a crockpot or on the stove.

If on the stove boil chicken thighs in water in a large pot filling the pot about halfway with the water (again I’ve cooked them frozen and thawed and it didn’t matter) and seasoning chicken with all the seasoning listed. Once chicken is cooked, remove from pot to cool so you can shred it while you prep the rest of the meal.

Open jars of soups and add to water you boiled chicken in along with egg noodles. Cook until done. Re-season to taste.

Add shredded chicken back to the pot and serve!!

This is a one pot, easy meal and if the chicken is thawed can be cooked in less than 45 minutes. This is very versatile too so you can add carrots or other vegetables. I don’t because of the picky eaters I have!

My 6 year old grandsons, and my grown kids still ask for this recipe each time we are together. I cook batches for my daughter at college and now I’m cooking it for her roommates upon their request 😂

Homemade Chili

1 pound ground beef

1 onion, chopped

1 (15 ounce) can tomato sauce

1 (15 ounce) can kidney beans

1 (14.5 ounce) can stewed tomatoes

1 ½ cups water

1 pinch chili powder

1 pinch garlic powder

salt and pepper to taste


Place ground beef and onion in a large saucepan over medium heat; cook and stir until meat is browned and onion is tender, about 5 to 7 minutes.


Stir in tomato sauce, kidney beans, stewed tomatoes with juice, and water. Season with chili powder, garlic powder, salt, and black pepper. Bring to a boil, reduce heat to low, cover and let simmer for 15 minutes.


Along with shredded cheese, sour cream, or corn chips
