What's Up With the Parish Crawfish Expansion?

You might’ve noticed some big changes to that vibey little shack on Main Street lately. Parish Crawfish, Zachary’s beloved drive-through boil stop, is getting a serious glow-up—and no, it’s not just for looks.
New owners Danny and Briana Sikes, along with their partner Patty Carpenter, have been steadily transforming the business since acquiring it a year ago. The latest update is impossible to miss: a bright red, standing seam metal roof that now tops an expanded space built off the side of the original shack.
Locals have been buzzing—are we finally getting indoor seating? Not quite. “We’d love to,” says Briana, but that would mean jumping through a whole bunch of hoops with DHH. For now, you’ll have to wait til you get home...or enjoy from the carpool line like *someone I know.

The new addition isn’t for guests—it’s for the hardworking team behind the scenes. The original kitchen setup was barely a few hundred square feet. Imagine cramming seven employees, boilers, warmers, and all that steam into such a tight space. The heat was, in a word, brutal.

With the new expansion, Parish Crawfish is relocating its boilers, fryers, fridges and freezers. They’re also adding a crawfish washing station, prep sinks, and (hallelujah) staff bathrooms. It’s all part of an effort to keep things running smoother, cooler and cleaner as the business continues to grow.
And grow it has. Since taking over, the trio has taken Parish from a seasonal pop-up to a year-round operation. When crawfish aren’t in season, you can still swing through for gumbo, king cakes, snow crab, egg rolls, Best Stop boudin, and more. Everything they serve is locally sourced from right here in South Louisiana—because freshness and flavor are always top priority.
Oh, and in case you missed it—a few weeks ago, 90s country superstar Deana Carter popped by Parish Crawfish. So yeah, that kind of glow-up.
